Tips for Refrigerators

  • 2Packaging

Cover the food with refrigerator-suitable packaging materials in an airtight manner. Dull face of aluminum foil should touch the food. Bright face may oxidize.o Wrap lidless containers with double-fold foil (as bright side facing out) and seal them with a rubber band. Pay attention to the expiry date of frozen food packages. Making a list consisting of the number of packages, food types, and storage date will make it easier to control the food in the deep freezer compartment. You can safely freeze your food in an airtight way by using stretch film, waterproof plastic wrap, or polyethylene bags.

  • 3Considerations when cooling food

Fridge compartment temperature should be 2-3 °C. Please store potatoes, onions, pumpkin, and garlic in a cool, dry and dark place; not in the refrigerator. You may store spices and herbs in the fridge compartment. When purchased ungrounded, they can be stored in the fridge up to 1 year. Store your fruits and vegetables without cutting and washing in the crisper compartments with high humidity, and in punctured clean bags allowing them to breathe. Never use black plastic bags. It is useful to store fruits and vegetables in separate compartments. Fruits that produce ethylene gas (apricot, banana, nectarine, pear, plum, tomato) and the vegetables which are sensitive to this gas (broccoli, cabbage, carrot, cucumber, green beans, pepper, lettuce) should not be kept together. Fresh meat, delicatessen cold cuts, fish and poultry should be stored in refrigerator immediately after purchase; they should not be left outside. Do not place humid food at the rear of your refrigerator. They may get frozen when touching cold air. Therefore, keep your humid food in sealed containers to avoid freezing.

  • 4Considerations when freezing food

Temperature of freezer compartment must be at least -18 °C or lower. Only the refrigerators with 4-star deep freezer are suitable to freeze fresh food. As liquid food will expand by 1/10 when frozen, avoid filling in the cup up to the brim. Firstly cool the food in fridge before freezing. Never refreeze thawed food. Do not allow previously frozen food to touch new food in the freezer. Do not freeze too large a quantity of food at one time. By freezing the food in the fastest way possible, you can best protect food quality.

  • 5Freezing Meat

You should avoid freezing fried or breaded products. Freezing of oil is more difficult than protein and carbohydrates; and their storage life in a deep freezer is shorter. Therefore, you need to trim fat from chopped steak etc. to store them in a deep freezer longer. You are recommended to freeze meat in one or two slices in a bag after applying a slight amount of olive oil on each slice of meat.

  • 6Freezing poultry and game meat

Small poultry should be packaged as a whole and the large ones should be packaged in pieces. Game meat must be cut into pieces 24 hours after slaughter. As you can store oil-added meats for 3 months and no-oil added meats for 12 months, it will be better to add oil after thawing the meats.

  • 7Freezing the fish

If it is more than 1kg, cut the fish into pieces and clean as ready to be frozen and rest them 1-2 hours in the freezer before packaging. After they are frozen, immerse the fish into iced water upside down so that an ice layer will form on them; then, immediately package the fish. Preferably, package the fish with aluminum foil and make sure there is no air left inside. Before unpacking the frozen fish, thaw them in the fridge compartment or cook them when completely frozen. Seafood will keep their first-day freshness and nutritional value if frozen by the shock method.

Dry and place the vegetables on a tray, not on top of each other, and place them in this way in to your freezer. After you are sure that vegetables are frozen, store them in plastic bags or airtight containers. Broccoli, pepper, peas, spinach, sweet corn and pumpkin can be frozen by shock method. Cooking times of frozen vegetables are 1/3 times shorter when compared to fresh vegetables. The peas won"t lose its real taste if frozen within 2.5 hours after being picked from the field. As they contain too much water, cucumbers, lettuce, head lettuce and raw or overripe vegetables are not suitable for freezing. Frozen vegetables should be cooked in boiled water or oil without thawing. Mashed frozen vegetables should be allowed to thaw slightly before cooking. Thawed vegetables must be used immediately and they should never be re-frozen. Cooked in a microwave with their own steam, vegetables in special bags do not lose their nutritional value. Frozen vegetables in vacuumed packages are protected to their first-day freshness.

  • 9Freezing fruits

Some fruits continue to ripen even after being picked. And this determines storage conditions of the fruit. Only ripened fruit can be frozen. If not fully ripe, the fruits should be stored at room temperature. If the fruit does not continue to ripen after picking, it should be stored in the refrigerator. If the fruits are too ripe, you may freeze them mashed, by cutting rotten parts and adding some lemon juice to later use in desserts. Frozen fruits can be eaten raw or used to make marmalade, compote or tarts after thawing. If frozen by adding sugar, the fruits protect smell and taste after they are frozen. Jelly, marmalade and fruits must be used only after being thawed entirely in order to prevent softening of the cream cakes and cakes. It is more suitable to use storage boxes to freeze cakes. As the dough is difficult to remove from foil, aluminum foil is not recommended. If the thawed cream cakes are heated at 150-200 ºC temperature for 5-10 minutes, they will be fresher than the ones thawed under ambient temperature and this also protect their aroma.

  • 12Freezing dairy products and eggs
